Thanksgiving-Eve-It’s-Never-Too-Late Vegan Feast Guide!

This happy time of year has had me visiting and reuniting with friends and family instead of posting – apologies!  Especially silly as this is our 4-year anniversary of cruelty-free eating!  BUT, you never know who else might be running woefully behind, so I decided to share some of the wonderfulness posted by those who haven’t been distracted (or, more likely, who are simply much more organized and efficient than I!).

I am choosing to post links to a few different things, in the hopes of speaking to novice and experienced vegan chefs, those who want “the classics” and those who want to glam it up a bit.

Mercy for Animals shared this “Vegetarian Thanksgiving Meal Plan”.  It has all the classics covered: pumpkin pie, garlic mashed potatoes – even a vegan green-bean casserole!  They titled it “vegetarian”, but my quick review of the recipes all looked vegan to me!  Their Thanksgiving Loaf and Vegan Gravy feature sage - the Thanksgiving herb – and sure to bring on bouts of holidays-past nostalgia.  This site also has a “pledge to pardon” a feathered turkey friend – AND you will be entered to win some turkey-free goodness!

I knew the ever-talented, fabulous Vegenista would NOT disappoint this holiday season, and I was right!  She covers it all – and beautifully!  To set the tone, and remind us why we choose our plant-based diets, she posts a video from Farm Sanctuary about two gobblers who meet their forever home and new, loving owner (WARNING – your eyes may leak).  Next, you’ll find her link to some of Dreena Burton’s delicious Thanksgiving and holiday recipes – for those who want to step up their game this year.  Finally, a gorgeous post featuring Nava Atlas’Baked Thanksgiving Risotto” and a Vegenista-original, Fall/holiday-themed salad featuring arugula, red pear, pistachios and maple-dijon vinaigrette.  Outrageous.  I want to eat ALL of it, at once!  Thank you Vegenista!
